Journal of Food and Dairy Sciences publishes monthly original research and review articles related to nutritional and safety aspects of food and dairy products with emphasis on research and development of food and dairy industries. The journal publishes papers including but not limited to the following fields:
Physicochemical and microbial characterization of food and dairy products in relation to quality standards.
Microbial, biotechnological and enzyme processing of food and dairy products.
Modern techniques of food industry and engineering.
d. Modern sensing techniques for food and dairy industries optimization.
Publishing Ethics
Academic publishing depends mainly on trust. Publishers trust the editors' decision, editors respect the peer reviewers' feedback, and peer reviewers trust the authors' data. This full and meaningful trusting system should be based on ethics. These ethical issues should be respected during the publishing process. (According to COPE guidelines).
1. Ethical compliance of research
First of all, authors should respect the ethical and security issues of research from the research proposal to the end of experimentation Ethical and security issue may arise surrounding animal, biotechnology and plant breeding research. (https://jfds.journals.ekb.eg)
2. Research funding
Authors should mention and acknowledge the research funders in the manuscript. This funder could be research foundation, governmental body, commercial company or self-funding.
3. Research misconduct
If the editor suspects research misconduct in the manuscript, he has the right for undertaking all legal procedures against the author(s). This research misconduct could be:
3.1. Data fabrication
Data fabrication means making up of research results without carrying out experimentation.
3.2. Data falsification
Data falsification means that the researcher(s) carried out the experimentation; however, the researcher(s) manipulated, changed or omitted some or whole data from the research results.
4. Plagiarism
Plagiarism means the using of original materials or ideas from one's own and writing as if they were the author's own. All submitted manuscripts are subjected to check against plagiarism before evaluation, and the editor has the right to reject the manuscript if the similarity index exceeds 25%.
5. Duplicate submission
Duplicate submission means submitting the manuscript to a journal when it is already under processing in one or more other journals. Therefore, it is not allowed to submit a manuscript to be considered for publication if it is under consideration by other journals.
6. Redundant publication
Redundant publication means the inappropriate splitting of the research finding into several manuscripts and submitting to more than a journal.
Submission System
Authors are requested to submit their manuscript according to the journal style format as a Microsoft Word file. The Journal Manager will check the originality of the manuscript against plagiarism using IThenticate software. Authors are requested to suggest two potential national reviewers as well as two potential international (foreign) reviewers with full mailing/emailing details. The executive editor will read the manuscript, and check the innovative nature, the progress beyond the state-of-the-art, the quality of English writing and the compliance to the formatting style of the journal. The executive editor has the right to reject manuscripts, which do not meet publishing ethics or minimum quality standards. Also, he may ask for further improvement of manuscripts that are written in poor English.
Editor will assign at least two potential reviewers for evaluating the manuscript, one of them will be international. He has the sole right to use the suggested reviewers or not taking into account the principle of "conflict of interest". It is not allowed to resubmit a manuscript for publication in case of previous rejection by Mansoura University Journal of Agricultural Sciences.
Covering Letter to the Editor
It is mandatory that the corresponding author signs a covering letter to the editor during submitting his manuscript. This covering letter should include these commitments:
A declaration that all authors agree for publishing their manuscript in Mansoura University Journal of Agricultural Sciences.
A declaration that there is no personal or financial conflict of interest with other individuals or organizations.
A declaration that authors followed the rules and legislations of the research ethics (ethical issues of research, MansouraUniversity).
A declaration that the submitted manuscript for publication is original, and has not been submitted to other journal or previously published in Arabic or any other language except in these cases:
Publishing during or after patenting process.
Publishing as part of an academic thesis.
Publishing as an academic lecture for only educational purposes.
Publishing the abstract of the work in scientific conferences.
Manuscript Formatting
Authors are requested to follow the instructions of journal style format, and the executive editor has the right to ask the author to reformat the manuscript according to the style of the journal.
The structure of the manuscript
The manuscript is consisted of the following sections in order: (Tile of the manuscript, Abstract (250), Keywords (3-5) words, Introduction, Materials and Methods, Results and Discussion, Conclusion, Acknowledgments, References and Arabic summary). In another file, title Page is consisted of (name of Author’s and Affiliation of Author’s, Corresponding author should be marked with an asterisk (*) with his mailing details (e-mail and phone number)
Text formatting
The manuscript should be written in a single-column with a double-spacing and line-numbering format using Times New Roman with 10 font size. It is recommended to avoid the text justification (Ctrl+J button). You are strongly advised to use the “spell-check” and “grammar-check” functions of your word processor.
The title:
The title should be concise and descriptive without abbreviations and formulae using. The title should be written as Times New Roman with 14 font size and bold font style.
Author(s) name and affiliation:
Author(s) should write the given name(s) and surname(s) as Times New Roman with 12 font size and bold font style. The affiliation of authors should be illustrated by superscript numbers (starting from 1) at the end of the family name, and authors whom have the same affiliation should take the same number. The affiliation of authors should be written as Times New Roman with 9 font size and notbold font style, and the superscript numbers should be written in front of the affiliation address.
ABSTRACT:
The abstract should be concise (250 words), informative and could be understood by non-specialists. The abstract should briefly describe the importance of the research problem, research aim, the methodology, the significant results and the conclusion. The abstract should be written as Times New Roman with 9 font size.
Keywords:
After abstract, authors should write about (3-5) keywords (separated by semicolons) reflecting the scientific content of the paper for indexing purposes. Avoid using abbreviations, plural, conjunctions and prepositions. The keywords should be written as Times New Roman with 9 font size.
INTRODUCTION:
The introduction should illustrate the research problem, the relevant literature for solving this research problem, the proposed approach and its progress beyond the state-of-the-art, and the objectives of the research. The Introduction should be written as Times New Roman with 10 font size.
MATERIALS AND METHODS:
In this section, authors should provide a precise description of the experimental protocol, the materials preparation, measurements procedures, calculation and statistical analysis methods. The experimental procedures should be organized chronologically using the passive voice. Materials and Methods should be written as Times New Roman with 10 font size.
RESULTS AND DISCUSSION:
This section should be written in a clear and concise form taking into account discussing the obtained data rather than repetition. Authors should also avoid the extensive and unjustified citation and discussing of former published literature.
Tables should be kept as simple as possible, and should be numbered consecutively according to their ordering in the text. Authors are required to use Arabic numerals for data presentation in the table body, and each Table should be presented with a legend and footnotes if necessary.
Graphics should be in a high resolution, and numbered consecutively according to their ordering in the text. Each figure should be provided with a caption below the figure. This section should be written as Times New Roman with 10 font size.
CONCLUSION
Authors should summarize the most important results of research in conclusion to allow readers to understand the research finding without reading the whole manuscript. This section should be written as Times New Roman with 10 font size.
ACKNOWLEDGEMENT
Authors are requested to include an Acknowledgement before the reference list for those provided help during research course (individuals or organizations) including financial support, lab assistance, language editing, etc. This section should be written as Times New Roman with 10 font size.
REFERENCES
Author(s) should ensure that all cited references in the text are included in the reference list and vice versa. In case of citing unpublished work in the text, it should not be cited in the reference list. References should be cited in the text by the author's surname followed by the publishing year in parentheses. If the paper had two authors, the reference should be cited in the text by the surname of the first and second author followed by the publishing year in parentheses, and in the case that the paper had more than two authors the reference should be cited in the text by only the first author's surname followed by "et al." and the publishing year in parentheses. In case of citing two or more references for an author in the same publishing year, the references should be identified by lower case letters following the year in both text and reference list. In case of citing an internet source, the full URL and the last accessed date should be given. References should be listed in alphabetic order in the reference list according to the following style:

Authors are requested to include an Arabic summary at the end of the manuscript. If there is no Arabic native speaker among authors, the excutive editor will be resposible for preparing this Arabic summary.
Publishing Charges
Authors are requested to pay the evaluation fees to the journal manager (315 L.E. for Egyptians and 500 L.E. for non-Egyptians). The corresponding author will be requested to pay the publication charge after accepting the manuscript for publication (80 L.E. per page for Egyptians and US$10 for non-Egyptians). Discounts are avalable for member of the faculty of Agriculture Mansoura University 50 L.E. per page.
